Silsal’s favorite foodie, Sophie Vanderhaeghe (AKA Douceurs d’Alger), shares her recipe for super-easy, classic pancakes. Whether you have them for breakfast, brunch or dessert just be sure to prepare plenty, as they are always a huge hit.
Ingredients
4 eggs
2 sachets, or 8g vanilla sugar
80g butter (melted)
1l milk
400g white flour
Method
- Beat the eggs and sugar together in a heat-proof mixing bowl.
- In a frying pan, melt the butter over medium heat. Once melted, add it to the mixing bowl. Then, add the milk.
- Sift the flour, slowly adding it to the mix. Whisk well until the mixtures forms a lump-free batter. Let stand for 30 minutes.
- Butter a non-stick frying pan and place over medium heat. Once hot, ladle the batter into the pan. Gently, tilt the pan so that the batter forms a circle.
- Cook for about one minute, until the bottom is golden in places and the edges begin to lift from the pan.
- Using a spatula flip the crepe and cook the other side until golden brown in places.
- Place on a plate and cover with aluminium foil to keep warm and soft until serving.
- Serve hot or cold with icing sugar, jam, lemon or Nutella.
