Douceurs d’Alger’s Chebakia Cake

Ingredients
  • 3 eggs
  • 150g sugar
  • 1 cup honey
  • Pinch of salt
  • 1 sachet of vanilla sugar
  • 150ml of sunflower oil
  • 1⁄2 cup cinnamon
  • 2 tbsp orange blossom water
  • 1 cup vinegar
  • 1⁄2 cup crushed fennel seeds
  • 1⁄2 cup crushed anise seeds
  • 180g flour
  • 1 sachet of baking powder
  • 50g almonds, finely ground
  • 45g plain yoghurt
  • To Finish
  • 50g honey
  • Sesame seeds
  • Method
    1. Preheat oven to 180 °C.
    2. In a bowl, add eggs, sugar, honey, salt and vanilla sugar.
    3. Mix with an electric whisk on high speed.
    4. Add sunflower oil, cinnamon, orange blossom water, vinegar, crushed anise and fennel seeds, and mix for another minute.
    5. Add flour and baking powder and mix.
    6. Finally, add ground almonds and yogurt then mix for another minute at high speed.
    7. Grease a cake tin and pour in the prepared mixture.
    8. Bake for 25-30 minutes and set aside.
    9. Heat 50g of honey in a small saucepan until it becomes liquid.
    10. Brush the top of the cake with the honey and sprinkle with sesame seeds.
    11. Let cool before removing from cake tin.
    12. Serve with tea or coffee.
