Our favorite dessert queen, Yasmine Idriss (of @petites_choses) shares her recipe
for a traditional Lebanese milk pudding.
The ultimate comfort food, Yasmine Idriss (AKA @petites_choses) lifts the lid on her recipe for a distinctly Lebanese, deliciously creamy take on rice pudding. Combining some of our favorite flavors, it’s one dish you’ll be whipping up again and again.
Ingredients
- 1l organic long life milk
- ½ cup Arborio rice (or another short grain rice)
- ⅓ cup caster sugar
- Pinch of crushed mastic
- ½ tsp vanilla extract
- 1 tbsp orange blossom
- Chopped pistachios, to garnish
- Dried petals, to garnish
Method
- 1. Rinse the rice well under running water.
- 2. Add the rice and milk to a large heavy saucepan and place over medium heat.
- 3. Bring to a simmer, stirring constantly with a wooden spoon.
- 4. Add the vanilla extract and crushed mastic, then simmer on medium-low heat for another 20-30 minutes, until rice is cooked and milk has thickened, stirring constantly. If the mixture needs longer to thicken, keep stirring on low heat.
- 5. Add the sugar and simmer for another 10 minutes, stirring constantly, until sugar has dissolved.
- 6. Remove the pan from the heat and add the orange blossom.
- 7. Transfer to bowl, cover and let sit in the fridge until cool.
- 8. Decorate with chopped pistachio and dried rose petals, then serve.
