Recipe: Riz Bi Halib

Our favorite dessert queen, Yasmine Idriss (of @petites_choses) shares her recipe
for a traditional Lebanese milk pudding.

The ultimate comfort food, Yasmine Idriss (AKA @petites_choses) lifts the lid on her recipe for a distinctly Lebanese, deliciously creamy take on rice pudding. Combining some of our favorite flavors, it’s one dish you’ll be whipping up again and again.

Ingredients

 

 

  • 1l organic long life milk
  • ½ cup Arborio rice (or another short grain rice)
  • ⅓ cup caster sugar
  • Pinch of crushed mastic
  • ½ tsp vanilla extract
  • 1 tbsp orange blossom
  • Chopped pistachios, to garnish
  • Dried petals, to garnish

Method

 

 

  1. 1. Rinse the rice well under running water.
  2. 2. Add the rice and milk to a large heavy saucepan and place over medium heat.
  3. 3. Bring to a simmer, stirring constantly with a wooden spoon.
  4. 4. Add the vanilla extract and crushed mastic, then simmer on medium-low heat for another 20-30 minutes, until rice is cooked and milk has thickened, stirring constantly. If the mixture needs longer to thicken, keep stirring on low heat.
  5. 5. Add the sugar and simmer for another 10 minutes, stirring constantly, until sugar has dissolved.
  6. 6. Remove the pan from the heat and add the orange blossom.
  7. 7. Transfer to bowl, cover and let sit in the fridge until cool.
  8. 8. Decorate with chopped pistachio and dried rose petals, then serve.
