Recipe: The Snickers Cake

The ultimate indulgence, @thesnacksociety shares the recipe for her famously irresistible Snicker’s Cake.

Who doesn’t love a Snickers bar? It’s the perfect combination of salty peanut, chocolate and gooey caramel. Is your mouth watering yet? Now, imagine that in cake form. Here, Recipe developer extraordinaire, Kamilla Ormarzay (or @thesnacksociety) shares her recipe for the ultimate Snicker’s Cake.

Ingredients

For the base:
  • 1 cup gluten-free oats
  • 1 cup peanuts
  • 2 tbsp all-natural peanut butter
  • 2 tbsp coconut oil
  • ½ cup dates, pitted
For the caramel & nut layer:
  • 2 cups dates, pitted
  • 3 tbsp coconut oil
  • 3 tbsp all-natural peanut butter
  • ½ cup coconut milk
  • 2½ cups peanuts
  • 1 tsp vanilla powder
For the chocolate layer:
  • ½ cup cacao powder
  • ¼ cup maple syrup
  • 3 tbsp coconut oil
  • 2 tbsp water
Method
  1. Place all of the base ingredients into a food processor and mix well until it forms a sticky, dough-like texture.
  2. Line a 6- or 7-inch cake tray with baking paper. Then, press the base ingredients into the bottom of the tray and flatten. Place in the freezer and let rest.
  3. Meanwhile, in a bowl, mix together the dates, coconut oil, peanut butter, coconut milk and vanilla powder to form the caramel & nut layer.
  4. Once the mixture forms a paste, add the peanuts. Then, using a food processor, pulse the mixture 2-3 times.
  5. Pour the mixture over the pre-prepared base layer. Return to freezer and let sit.
  6. In a mixing bowl, combine the cacao powder, maple syrup, coconut oil and water and mix well.
  7. Spread, or pipe, the chocolate layer on top of the caramel and nut layer. Then, return cake tin to freezer for another 3-4 hours, until properly set.
  8. Remove from freezer 15 minutes before serving.
