Recipe: Creamy Spinach Orzo

A one pot recipe that’s good for the soul!

One of the easiest and tastiest meals we’ve ever tried is this creamy spinach orzo. If you’re looking for that home cooked comfort food or if you’re feeling a little bit lazy, this one-pot no fuss, no prep work, and no-cleanup meal is perfect for you!


  • 2 ½ cups orzo pasta
  • 1 cup asparagus
  • 2 cups mushrooms
  • 2 cloves of garlic (minced)
  • 2 tablespoons of olive oil
  • 2 cups vegetable broth
  • 2 cups whole milk
  • 2 cups baby spinach (coarsely chopped)
  • 1 cup freshly grated parmesan
  • Salt
  • Ground black pepper


  • Heat the olive oil in a pot over medium-high heat (until it simmers). 
  • Add the asparagus and mushrooms until fragrant (around 10 mins).
  • Add garlic and orzo and sauté for 1 minute (season with salt & pepper).
  • Add the vegetable broth and milk until it boils.
  • When boiling, cover and reduce the heat until it simmers.
  • Stir orzo occasionally until it is al dente (most of the liquid will be absorbed & a creamy sauce should have formed).
  • Add in the spinach and parmesan until the spinach wilts.
  • Season with salt and pepper.
  • Taste, serve & enjoy!
